What we will do
at Boqueria market :
We will meet at the Boqueria market, the oldest and most known Barcelona market, one of the most important markets in Europe, where the freshest and best quality products are found!
We will go directly to the most authentic and beautiful wine seller where while tasting cava we learn about Spanish wine & cava making traditions, Boqueria market history, Spanish food traditions.
Then we visit best Boqueria shops, where we learn to do the right shopping for our paella cooking class.
In the fruit store we will teach the participants which variety of tomatoes is the best for the pan con tomate recipe.
At the seafood store, participants will learn how to identify high-quality fresh seafood, which type of seafood is better for paella, how to clean some types of seafood.
We will visit the best spice shop where our chef will explain the culinary uses and beneficial properties of saffron and other Spanish spices, about olive oil and the techniques used by manufacturers to obtain extra virgin olive oil premium quality. Here we will try different olives types: Chupadedos, Pica-pica, Sevillana, while the chef will explain about the olive cultivation.
Next, we will visit the best Jamón shop where our chef will explain the curing process of Iberico acorn-fed ham (pata negra), show different types of ham, the traditional techniques of cutting ham by hand will be demonstrated, here we will try samples of Iberico acorn-fed ham.
At Cooking studio:
We will start with Cava tasting and learn about its origins and production. Cava is traditional Spanish sparkling wine, 95% production of which belongs to Catalonia and is located near Barcelona.
You will learn to cook:
- BLACK SEAFOOD PAELLA with cuttlefish ink: Huge, super slim, and SOOO Delicious! (80cm /30inches wide!) The thinner the paella the better!
- Fresh MUSSELS: steamed with white WINE. Those mussels that we just bought alive from the Boqueria market!
- Norway lobsters, cuttlefish, squids, monkfish, mussels, prawns! These are the essential ingredients for our paella!
- PAN con TOMATE: famous Catalan tomato bread: with famous Spanish Jamón and fuet (delicious Catalan sausage)!
- SANGRIA RED & SANGRIA WHITE: the BEST homemade one: fresh juice & fruits & good wine & liqueur.
Once our paella and other dishes are ready, we’ll taste our creations.
You will also receive recipes of all dishes you have learnt.

Top Notch Paella cooking class
What we will do
Our Top Notch 5-course evening paella class usually starts around 8.30 pm on weekends and holidays and it is a true paella feast!
Depending on the size of the class we will make different paella types: such as traditional seafood paella, paella Valenciana (meat & vegetable paella), vegetarian paella, and black rice paella, so all guests will be able to learn and taste more than one paella type.
We will start with Cava tasting, then learn and enjoy Pan con Tomate with Jamon, other Spanish dry meat, and traditional Spanish sheep cheese. Then Sangria workshop where we will make traditional Sangria (Red wine Sangria) and Cava Sangria (Sparkling white wine Sangria).
After mastering cooking skills during the paella workshop, our guests will sit together around a beautifully set table and share their creations, additional entrees, free-flowing Spanish wine, and pleasant conversation.
Then we’ll polish off our lavish dinner with a homemade seasonal dessert.
You will also get recipes for all the dishes we make together.
