This stock recipe can be a base for any other great dishes or sauces.
Ingredients for 4-5 pealla servings.
You will regulate amount of stock that you are going to get by adding certain amount of water. The rice : stock proportion depends very much on your pan size, your stove, your rice type, etc. For example: for 2 servings paella take 12 inch (30 cm) bottom pan and use 3/4 of cup (200g) of rice to 3.5 cups (800 ml) of stock.Β
Seafood and Fish:

π¦π¦π¦ prawns, could be just heads and shell of prawns (as many as you have π
π¦π¦π¦ langoustine, could be just claws and shell, (as many as you have π

π 6 big ripe tomatoes
2 heads of garlic
π₯ 2-3 carrots
1-2 onions
other vegetables like parsnip, leek, celery, turnip
Spices:
π 1-2 dried tomatoes
