So, Paella Valenciana is a meat paella recipe that authentic form is traced back to the mid-19th century, in the rural area around the city of Valencia, on the east coast of Spain.

Curiously, from the beginning, the Paella Valenciana recipe was a dish for poor people. Peasants cooked dinner in the fields in a wide pan on an open fire adding all ingredients they had at hand and what they could allow themselves. Common ingredients for authentic Paella Valenciana were simple meat like chicken, rabbit, beef, sausages, and simple vegetables like flat beans, tomatoes. So, in terms of protein ingredients, the paella Valenciana recipe consists of different types of meat ingredients (no seafood ingredients). That’s why the Meat Paella is Paella Valenciana’s second name.

Since its inception, Paella Valenciana (or meat paella) has been a dish that brings people together to celebrate an event. It is a mainly festive dish. The tradition to celebrate important family gatherings with this meat paella recipe is very much alive in our time in Spain, especially in the Valencia area. There are many culinary festivals today in honor of Paella Valenciana and they are called ‘Paellas al Carrer’, which means ‘Paellas on the street’. Hundreds of giant paellas are made with firewood and then distributed free of charge among the attendees.

Paella Valenciana | Meat paella recipe

Ingredients for 4 people 🥘🥘🥘🥘

🐰 Rabbit (~350-400 g), cut into pieces

🐥 Chicken(~350-400 g), cut into pieces

🐽 Chorizo or others sausages (300 g), cut into pieces

🧄 1-2 garlic cloves, chopped into small pieces

🌵 2-3 artichokes, clean and cut into pieces

🍅 4 ripe tomatoes, peel off, cut into square pieces or grate

🌶 2 tsp smoked sweet paprika 

🌸 1 pinch of saffron

🍚 400 g Bomba rice. Bomba is Spanish rice, the best for any Spanish meat paella recipe. Order it on Amazon, or substitute it with Arborio rice. If you can’t find any of those, use short-grain rice. Do not use brown rice. Do not wash your rice.
