What socarrat (torraet) is—and what it is NOT
Socarrat—also called torraet—is the toasty, crispy layer that forms on the bottom of the paella pan when the rice finishes drinking the stock and the sugars and fats caramelize. It isn’t charcoal or bitterness: it’s toasted flavor with nutty notes plus sea/vegetable nuances depending on the paella.

The foundation of success: pan size and rice depth
This is where paellas are won (or lost). The thinner the layer, the better the socarrat.
Depth rule: rice must sit in a maximum 1–1.5 cm layer. Depth rules: over 1.5 cm and forget about good socarrat.
Pan by servings: for 4 servings I use a 45–50 cm flat-base diameter paella pan. Size also affects stock:rice ratio and evaporation.

Tip: if you try to cook 7 servings in a pan sized for 4–5, the rice piles up and no crust will form; you’ll also need less stock to avoid over-wetting.
Rice and stock: type, ratio, and temperature
Bomba vs. Calasparra: exact dose per person
My standard: Bomba rice, 80–90 g per person. Bomba: 80–90 g per person and not a single drop of pre-rinsing water.
Premium alternative: Calasparra (similar amylose profile).
Never rinse the rice: surface moisture reduces absorption and dulls flavor.
Boiling stock and the 3:1 ratio (fine-tuning included)
Base ratio: 3 cups of stock per 1 cup of rice (by volume). The stock goes in boiling and all at once—and don’t stir.
Doneness tweak: if it’s dry but the grain is still very hard near the end, add 30–60 ml of very hot stock, spoon by spoon, and let it absorb—without touching the rice.
How to boost store-bought stock (if it isn’t homemade)
Surf & turf: simmer the stock with prawn/crayfish shells and a small piece of Serrano ham for 20–30 minutes; strain.
Vegan: boost with mushrooms, onion, and carrot at a gentle simmer for 20–30 minutes.
Socarrat step by step: from the first boil to the final crackle
Sear and reserve the “stars”: seafood and/or meats with shells/skin on; brown in the pan to build fond, then reserve. Shells on, always: that’s where the sea flavor lives.
Quick sofrito (no onion): tomato, garlic, and paprika. If using onion, it must be long-sweated and added already cooked, never raw (onion water fights socarrat).
Measure and pour boiling stock: 3:1 to the rice; taste for salt before adding the rice.
Add and spread the rice: distribute in an even layer and do not touch it again. Why not stir? You’d release starch uncontrollably and lose texture.
Main cook: strong heat to get a lively boil, then medium heat until the bottom is almost dry.
Doneness check: when little liquid remains, taste the grain. Aim for al dente (slightly firm in the center). Remember: resting softens a notch.
The famous finish (to “socarrar”): raise to medium-high heat for 30–40 seconds. When I hear a fine crackle, I give it 30–40 seconds and stop it on damp towels.
Stop the cooking + rest: set the pan on damp towels for 1 minute (to kill carryover heat) and then cover 5 minutes with a cloth or paper.
Release and serve: slide a spatula under the bottom: if it lifts in crispy plates of golden crust, you did it. Serve in the pan so the torraet doesn’t break.

Use concentric rings and adjust to avoid hot spots. If one area crackles early, rotate the pan slightly.
Wood fire
Very lively, aromatic heat. Manage with embers: if the center runs ahead, drag embers to the edges. Great for crust because it drives evaporation.
Induction/Glass-ceramic
Very direct heat. Use a ferromagnetic paella pan and perfect leveling. If the center dries first, drop the power one notch and lengthen the overall time slightly before the final blast.
Mistakes that ruin socarrat (and how to fix them)
❌ Rinsing the rice → poorer absorption.
❌ Stirring during cooking → starch dumps out; mushy texture.
❌ Undersized pan for too many servings → thick layer, no crust.
❌ Cold or lukewarm stock → cooking stalls; poor bottom boil.
❌ Lid on during cooking → excess steam, socarrat impossible.
Quick fixes
It dried out and is hard: add spoonfuls of very hot stock, don’t stir, let it drink.
Burnt smell: get it off the heat now; salvage the top layer and don’t scrape the blackened parts.
Seafood, meats, and veg: when to add them to protect the torraet
Sear first, return at the end: brown at the beginning to build flavor, reserve, and place back on top near the end (last minutes) so they don’t release extra water that would drown the bottom.
Shell-on for seafood: shells give concentrated flavor and protect from overcooking.
